5Must have for Sous VideFeb 20, 2011

I've only been using it for a few days now, so if it falls apart in the next few months, I'll amend my review.

I primarily use this for Sous Vide cooking, which requires most meats to be seared when they are done cooking. When you are making 5-10 steaks at a time, and want to serve all of your guest at once, a reliable torch that works fast is a must.

I had been using a propane torch ($12 at Lowe's) and finally got tired of the flame-outs and uneven burn. Let me say, this torch is awesome. It puts off way more heat than the propane torch, does not flame out no matter how fast you move it or what angle you hold it at. I bought the GasOne 12-pack of butane cans (about $2 per can with shipping included), and a dinner of 5 steaks seemed to use about 10-15 percent of a fuel can.

Its very hot, and has a nice wide flame, resulting in fewer passes when torching a steak.

Pros:
-Cheap Fuel
-Steady, Hot, Wide flame
-Adjustable flame intensity
-Big. It sits well in the hand with a fuel can attached
-Trigger for lighting the flame. No lighter or sparker required
-Trigger does not control fuel flow. I thought this would be bad at first, but it would actually be a pain to have to hold the trigger down for extended use

Cons:
- It didn't come with a Ferrari.

Great torch with power. The flame is around 22 cm when full throttle. I use it for cooking (creme brulee, searing beef, charring eggplants for Middle Eastern food, grilling skin side of fish fillets for interesting Japanese food) and it works perfectly. Just remember to adjust the flame so it is a sharp blue. If the flame is yellow the combustion is incomplete and some of the gas particles will deposit on your food item. The torch clips on really easily on a small gas canister and off you go. The build of the item is very good. I believe it is made in Japan.

Other uses:
- Emergency gas hob. If you use bottled gas and run out, just put this burner on its side on the hub under your pot.
- Killing kitchen ants. I also have lizards in the kitchen and they eat the ants so there is no need to clean up. Just zap the ants.
- Bending plastic. I bent a plastic dish washer so that I can use it to clean my espresso machine.
- Lighting candles. If you put the torch on the lowest power you can use it to light old fashion candles.
- Lighting fires. If you have a fireplace this burner can be used to start the fire, unless you're a traditionalist.
- Torture. I have not used it yet, but if I catch an Al Queida terrorist it might come in handy.

NEW USES
- Killing small flies. If you got those small flies hoovering over food scrap, the torch is great! A bit harder to kill normal house flies with the torch. You might run around accidentally putting fire to your house.
- Cockroaches are also a good target if you just have one of the once in a while.
- Killing plants that continued to grow in the cracks in the cement of the driveway.

5Before you order it, you better find out local suppliers for the special butane canistersAug 28, 2011

I had concerns initially as this torch burner only fits on certain butane canisters which are hard to find anywhere locally via internet search. The torch burner itself is not expensive, but the shipping and handling of the butane canisters sold online are too high to be ignored for the overall cost. Luckily, I found out that Costco business centers carry them ($4.99 for 4 cans) as lots of restaurants are using the butane burners which use the same type of canisters. So, without a second thought, I placed the order immediately.

This is my very first torch burner, but I was too eager to try it before I read the instruction (printed on the back pages of the folded cardboard). And it just works perfectly. That tells how intuitive and easy to use it. I have been using it to sear meat prepared via Sous Vide and heat brown sugars on the custard of Creme Brulee. I am very happy with its performance and would highly recommend it.

After years of reading the rave reviews for the Iwatani I finally decided to see if it lives up to the hype- let me assure you, it does! It's head and shoulders above the relatively puny "culinary torches" that use the dinky little butane carts designed for lighters. And since it uses butane it avoids the occasional off flavor you get from a propane torch. I bought this beauty primarily to brown meats that I cook sous vide, with perhaps the odd creme brule here and there. And it performs admirably. You get a very hot flame on high but with very good control over the heat.

I was previously using one of those creme brulee torches purchased at a local cooking shop to provide color to my Sous Vide cooked items. This torch was recommmeded pretty heavily in the forums. I did not expect it to be as good as it was. I was totally impressed. If you are currently using some little creme brulee torch for your Sous Vide, this one blows it away! The vendor I got this from (I think "Japan to you") was great and super quick delivery. Everything was as expected.
